Almond Pancake Mix
 

3 cups nonfat dry milk
2 +1/2 cups all-purpose flour
1 cup whole-wheat flour
1 cup finely ground almonds
2/3 cup baking powder
1/3 cup granulated sugar
1 tablespoon salt

In a large bowl, stir all ingredients together until well blended. Store in a resealable plastic bag. Give with recipe for pancakes.

Yield: about 7 1/2 cups pancake mix, enough for 3 batches of pancakes.

To make pancakes: In a medium bowl, combine:
2 +1/2 cups pancake mix
1 +1/4 cups water,
1 egg
2 tablespoons vegetable oil

Stir just until moistened. Heat a greased griddle over medium heat. For each pancake, pour about 1/4 cup batter onto griddle and cook
until top of pancake is full of bubbles and underside is golden brown.

Then turn with a spatula and cook until remaining side is golden brown. Regrease griddle as necessary. Serve with butter and syrup. Yield: about 1 dozen 5-inch pancakes.

You can make this fabric bag to put bag of mix in for gift giving: For fabric bag, use a 10-1/2″ by 40″ fabric piece of your choice. With right sides of cloth together and matching short edges, fold fabric in half; finger press folded edge (bottom of bag). Using a 1/4″ seam allowance and thread to match fabric, sew sides of bag together.
Press top edge of bag 1/4″ to wrong aide; press 1/2″ to wrong side again and stitch in place. For a bag with a flat bottom, match each side seam to fold line at bottom of bag; sew across each corner 1″ from point. Turn bag right side out. Put pancake mix in bag and close the top of bag with a pretty ribbon. Attach the recipe for the pancakes to the bag. You can also use a pretty jar if you don’t care to make the bag. Be sure and attach the recipe for the pancakes to
your gift.

This is one of my favourite potato salad ideas ever. it can be used as a base for many different potato ideas. Feel free to add other ingredients to this, for example some chopped crispy bacon is an excellent addition.

I would recommend making the recipe once to see the size of the portions. for smaller or larger quantities, just multiply the quantities of the ingredients, with the exception of the onion. I would recommend, for 8 people, using 2 medium onions rather than 2 large, as too much onion can overpower this salad, however this is up to personal taste.

Ingredients:

500g New Potatoes

1 teaspoon of white wine vinegar

1 table spoon extra virgin olive oil

Half a teaspoon of seedy (whole grain) mustard

1 ½ table spoons mayonnaise

1 large red onion

1 teaspoon sour cream

Salt and pepper, freshly ground.

To make your salad:

  • Under cold running water, scrub the skins of the new potatoes. Boil them in lightly salted water to preferred texture.
  • Once they are done, drain well and cut into mouth sized pieces. For new potatoes this is normally just cut in half, but on some larger ones you may have to cut them smaller.
  • Put the potatoes aside, and in a small bowl, mix the mustard, olive oil, vinegar, pinch of salt and a good grind of pepper. Put the halved potatoes into a large bowl, and drizzle this over the potatoes. Leave this to stand for about 10 mins to absorb the dressing.
  • Finely chop the onion, and mix with the sour cream and mayonnaise. Providing the potatoes are cool by now, stir in to the mixture.
  • Chill well in the fridge
  • Transfer to a serving bowl, add a generous grind of black pepper to garnish, and serve.

Soap-making is a delicate process, but the ingredients used to make soap are fairly simple: oils, lye, water, fragrances, colorants, and other, optional additives. The fats and oils used in soap can be derived from either animal or vegetable fat. Typically, soaps made from vegetable oils are softer than those made with animal fat. The most useful oils for soap-making are fixed oils – oils that can be raised to a high temperature without evaporating. Fixed oils include a variety of base oils, such as olive, palm and coconut oils.

There are two types of fats used for soap-making: saturated fats and unsaturated fats. Saturated fats make a hard soap.

They commonly come in a solid form and must be melted prior to use; cocoa and shea butters are good examples of saturated fats. Unsaturated fats, like some vegetable oils, come in a liquid form, and are commonly used to make liquid soap. To use these fats to make bar soap, they must be mixed with saturated fat; the more saturated fat you use, the harder the bar will be.

Historically, lye (also called sodium hydroxide, potash, or caustic soda) was hand-extracted from wood ashes. It is now commonly found in many hardware and grocery stores. It is the ingredient that hydrolyzes the oils or fats, and turns them into soap.

The minerals and other additives in tap water make it less than ideal for soap-making. Therefore, it is best to use distilled, bottled, or spring water. There are two types of scent oils: essential oils and fragrance oils. Fragrance oils are man-made and contain alcohol, so they are typically avoided; the alcohol and other chemicals in the oil may be drying or irritating to the skin, and cause unforeseen problems with the saponification process, or ruin the soap mixture altogether.

Essential oils are more costly, and sometimes more difficult to find; however, a smaller amount is required (usually only a drop or two) and they retain their scent better because they are undiluted. Research oils thoroughly before use; some can be irritating to skin, or even toxic. Also, different amounts are required for different oils, because some will overpower others if the same amount is used for all.

Avoid potpourri, candle scent oils and other strong, commercially-made fragrances, as they often contain harsh chemicals that can be irritating to the skin as well. Whole or crushed herbs can also be used, but they will not give their full benefits in a first batch of soap; if you use herbs, the best thing to do is to rebatch the soap later, to extract the full benefit from the herbs.

Colorants can be purchased at a soap-making supply store.

There are also various other natural ingredients that you can use to color soap, such as powdered clay, cocoa powder, tea, paprika, saffron, or ratanjot. Avoid using fabric dyes, hair dyes, candle colorants, or paints to color your soap; even if they are labeled as “non-toxic,” they are not safe to have in contact with skin for prolonged periods, and they may dye your skin.

Some sources say that crayons can be added to soap for coloration, as long as they are made of stearic acid (most crayons made now are), but there is some debate on this topic; it is probably best to err on the side of caution, and avoid using them.

Depending on the oils used in the recipe, the resultant soap can be prone to spoilage.

Various preservatives can be utilized, such as vitamins E, C, and A, which are also great for your skin. These vitamins can be found in various oils. Sand or pumice can be added to the soap, to make it exfoliating. Also, some metals, such as titanium, silver, nickel, or aluminum can be added for antibacterial properties, and to make the soap bright white.

Creole Vegetable and Braised Beef Stew

3 tablespoons all-purpose flour
1 tablespoon Creole seasoning
2 pounds sirloin, cut into 1-inch cubes
3 tablespoons pure olive oil
1 large sweet onion, diced
1 large red bell pepper, diced
4 garlic cloves, minced
1 cup dry red wine
5 celery ribs, sliced
4 medium carrots, thinly sliced
1 (10-ounce) can diced tomatoes and green chiles
2 teaspoons beef bouillon granules
1 (10-ounce) package frozen sliced okra, thawed
1 (10-ounce) package frozen baby lima beans, thawed
1 (16-ounce) package frozen corn kernels, thawed

STIR together flour and Creole seasoning; dredge beef in mixture. BROWN beef in hot olive oil in a 5 quart casserole over medium-high heat 5 minutes. Add onion, bell pepper, and garlic; sauté 2 minutes. Add wine, stirring to remove browned particles from bottom of pan. Add celery and carrot, and cook 2 minutes. Add tomatoes and next 4 ingredients.

BRING to a boil; cover, reduce heat to medium-low, and simmer 30 minutes. Makes 8 to 10 servings. Preparation time: 30 minutes.
Cooking time: 45 minutes

Make New England Clam Chowder Recipe
1 large leek, split and rinsed, sliced thinly
1 potato, peeled and chopped into small, bite-size pieces
1/2 cup chopped parsley
1/4 cup ( 1/2 stick) butter
2 tablespoons flour
Salt and pepper to taste
13 ounces canned, whole, baby clams with juice
4 cups heavy cream or 2 cups milk and 2 cups cream
Chives, chopped, for garnish

In heavy saucepan over medium heat, sauté leek, potato and parsley in butter until the potato is tender and leek is golden, about 12 minutes.

Sprinkle flour over potato mixture and add salt and pepper to taste. Stir continuously for 2 more minutes. Add clams and clam juice; slowly stir in cream. Cook while stirring (but do not allow to boil) for 5 minutes or until thick and hot. Garnish with chives and serve hot. Serve in hollowed-out small rounds of crusty bread for a complete meal. Makes 4 servings.
