Things You’ll Need:

• Oil, Lard or Shortening
• 2 envelopes tomato soup mix, preferably Lipton cup-o-soup brand
• 2 envelopes Italian dressing mix
• 1 tablespoon paprika
• 2 teaspoons dried chervil (optional, but makes a huge difference in taste)
• 1 teaspoon seasoned salt
• 1 teaspoon instant chicken bouillon powder
• 1 teaspoon dried parsley
• 1 teaspoon tarragon
• 1/2 teaspoon sage
• 1/4 teaspoon pepper

1. Put all of the ingredients for the coating in a blender or food processor. The grilled chicken coating is enough for a whole chicken, cut up. Soak the chicken pieces in a brine of water, lemon juice and salt for at least one hour in the refrigerator. Remove chicken from brine and pat dry, sprinkle all sides of the pieces with season mixture. Let chicken sit at room temperature while waiting for the cast iron grill pan or grill to get hot.

2. Put about 2 tablespoons of lard or shortening if you really want that original KFC taste in the skillet, allow to get good and hot so you can get good grill marks and sear in the flavors, that is the whole purpose of this step. Now put chicken on grill or in skillet. Do not crowd the chicken when placing into the skillet. If you’re making this chicken recipe, chances are you weren’t looking for low-fat, healthy recipes;)

3. Brown the chicken in the skillet on high. Then remove chicken to a broiler pan and place in a 350 degree oven. Cook until the chicken is done, about 30 minutes.
