Broccoli Corn Bread
2 eggs
1 cup cottage cheese
1 package (10 ounces) frozen chopped broccoli,
thawded
3/4 cup chopped onion
1/2 cup butter or margarine, melted, divided
2 packages (8 1/2 ounces each) corn bread/muffin
mix
In a mixing bowl, lightly beat eggs. Add cottage
cheese, broccoli, onion, 6 tablespoons butter and
muffin mix; beat well. Pour remaining butter into
a 10-inch ovenproof skillet; pour batter into
skillet. Bake at 350 degrees for 40-45 minutes or
until golden. Cut into wedges and serve warm.
The kids will eat their broccoli when they try
this bread. The sweet taste of the corn bread
hides the broccoli flavor. This recipe is from
1995. The ounces of the boxed corn bread might be
smaller.
