Chicken and Dumplings is probably one of the most favorite dishes in the South. If you have never eaten a delicious meal like this your in for a real treat. I have lived on southern cooking my whole life and I want to share this fabulous recipe with you. If you love eating chicken, dough and gravy then this recipe is a perfect meal that is sure make your mouth water.

This meal is simple to prepare and cook. It should only take about 23 minutes to prep and about 1 hour and 40 minutes to cook.

Ok, so lets get started! All the ingredients for chicken and dumplings can be found in any grocery store. Here is a list on what you will need.

1 (3 pounds) whole chicken, cut up…how ever you choose (I prefer in chunks)

7 cups of water

3 Tablespoons of chicken bouillon granules

2 Cups of all-purpose flour

1 Teaspoon of pepper

1 Tablespoon of salt

1 Tablespoon of baking powder

1/4 Cup shortening

1/2 Teaspoon salt

2/3 to 3/4 of a cup of milk

4 Hard-cooked eggs (chopped)

Now the fun part!

Using the 7 cups of water, bring the water and chicken to a boil on the stove top. Cover and reduce the heat and simmer for 1 hour. Remove the chicken; and let cool. Then pour the broth you made from boiling through a wire-mesh strainer into a large saucepan, discarding any solids.

Skim off any fat…it’s healthy! Ok, return broth to the stove top and stir in the 3 tablespoons of bouillon granules and the 1 teaspoon pepper.

Now, skin and take the bones out of the chicken. To make it easier on yourself, buy boneless chicken. Cut the chicken in bite-size pieces and then place chicken in the broth. Then return the broth to a simmer.

When you have completed that task, put into a bowl and combine the 2 cups of flour, 1 tablespoon of baking powder and 1/2 teaspoon of salt. Cut in the 1/4 cup of shortening with a pastry blender (preferably) until mixture is crumbly. Then add the milk slowly until the dry ingredients are moistened. NOTE: Thats why the milk amount varies from 2/3 to 3/4.

Ok, turn the dough out onto a lightly floured surface. Gather the dough into a ball and knead lightly around 4 to 5 times. Then roll the dough to about a 1/8 inch thickness. Sprinkle the dough lightly with flour, and then cut it into pieces of around…2 inch squares.

Drop the dough squares (one at a time) into the simmering broth, stirring gently until all of the dough pieces are added to the broth.

After you have them all added, keep the heat at a simmer and stir often and slowly for 15 minutes. Oh, almost forgot! Make sure you boiled your 4 eggs hard in a separate pot and have ready to combine into your mix. Add the hard-cooked eggs into the saucepan just before serving. Make sure the eggs are chopped up.

This recipe is about 6-8 servings.

Cut chicken in strips. Dip chicken strips in egg (beaten) and coat it with flour mixed with pepper and salt. Deep fry it in a pan with hot fat or oil. Wait until the chicken browns and until it becomes crispy. For the mushroom gravy, all you have to do is simmer some chicken stock in a sauce pan under medium low heat. Add flour, salt and pepper. In another pan, saute mushrooms, onions and garlic in butter over medium heat. Combine the sauce mixture with the mushroom mixture. Stir occasionally and let it thicken. Serve the chicken strips with separate mushroom gravy.

Deep South Fried Chicken

In a large skillet, heat the shortening over moderate heat. Combine flour, salt and pepper in a brown paper lunch bag. Put enough pieces of chicken in the paper bag and shake it until coated. Repeat the procedure with all the remaining chicken. Fry them in hot oil or shortening. Lower the heat, cover and cook for twenty-five minutes. After, remove the lid and turn up the heat a little. Fry them until the chicken pieces are golden brown and crispy. Drain oil using paper towels. Serve immediately.

• Oil, Lard or Shortening
• 2 envelopes tomato soup mix, preferably Lipton cup-o-soup brand
• 2 envelopes Italian dressing mix
• 1 tablespoon paprika

1. Put all of the ingredients for the coating in a blender or food processor. The grilled chicken coating is enough for a whole chicken, cut up. Soak the chicken pieces in a brine of water, lemon juice and salt for at least one hour in the refrigerator. In a saucepan combine together orange juice, water, lemon juice, soy sauce, and rice vinegar. Combine and cook over medium heat for 3-5 minutes. Stir in orange zest, onion, garlic, ginger, and brown sugar. Allow to come to a boil. Combine the water with cornstarch and thoroughly mix. Mix slowly into the sauce, allowing it to thicken. Pour orange sauce over the chicken. Add red pepper flakes and top with green onions.

How to cook the fabulous Curry Chicken Recipe.

Ingredients:

  • 1 lb chicken thighs
  • 1 chili
  • 3 garlic cloves
  • 2 tbsp. fresh minced ginger
  • 1/2 cup white wine
  • 1/4 cup coconut milk
  • 1 tsp. salt
  • 1/4 cup yogurt
  • 3 tbsp. olive oil

 

Curry Chicken Spice Mix:

  • 1/2 tsp. cardamom
  • 1/4 tsp. turmeric
  • 2 tbsp. curry powder
  • 1/2 tsp. red pepper flakes
  • 1/4 tsp. pepper
  • 1 tsp. garam marsala
  • 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/4 tsp. cayenne powder
  • 1/2 tsp. cinnamon

 

First of all you have to make the spice mix:

Get a knife, press and chop the garlic and chili, cut the onion and chop the chicken thighs into small pieces.

Fry your spices in oil:

Put three tablespoons of olive oil in a high heated large saucepan and add the spice mixture as soon as the oil is hot.

Stir it until the spices become brown and roasted  usually it takes a minute.

Take care of your saucepan because it will burn!

As soon as the spice mixture got browned, put the onions, a teaspoon salt, pepper and ginger into it.

When the onion becomes darker add the garlic and cook it for one minute, but don’t forget to take care of the garlic because if it burns it becomes bitter.

Now you should see a dark sauce with your ingredients.

Put the salted chicken into the saucepan and roast it and put enough oil into the pot if it’s not enough.

When the chicken gets brown start carefully adding the wine.

Of course, the wine has an aroma, but you’ll also notice all the brown bits on the bottom of the saucepan.

These little pieces are full of flavor, and you want them included in the final product.

So if you add the wine, use a spoon start scratching in the liquid.

When the wine starts to boil off reduce heat to medium.

Now add the coconut milk and put turn temperature to low, cover and cook for about 15 minutes.

Finally turn off the heat and stir in the yogurt.

Serve the Curry Chicken Recipe with rice.
